1. Prepare the Apples
Wash, core, and cut the apples into quarters.
In a skillet, melt half the butter and brown the apple quarters for a few minutes.
Keep warm.
2. Prepare the Shallots
Peel and finely chop the shallots.
3. Cook the Black Pudding
Lightly prick the black puddings with a fork (this prevents them from bursting during cooking).
In the same skillet used for the apples, add the remaining butter and sauté the shallots.
Add the black puddings and cook for about 10 minutes over medium heat, turning regularly.
Season with salt and pepper.
4. Plating and Accompaniment
Serve immediately with the golden apples.
